It is through racking, in fact, that the cellarman separates the wine from the marc at the end of fermentation, in order to decant the new product into steel and thus begin resting and maturation. This operation also becomes, for the whole family, and in particular for Adriano, Alba and Claudio, a time to take stock: it is with the racking of the new wine that you can really take stock of the harvest.

L’annata non era partita molto bene qui a Poggio Molina: una gelata ad Aprile aveva distrutto gran parte delle piante già in fiore e la siccità dell’estate non ha permesso alle viti di ritrovare vigore.
