Description
Fruit of a blend of Merlot and Cabernet Souvignon,
is a dark ruby red wine, with violet notes.
The ageing in oak barriques for 24 months and the refinement in bottles for at least 6, give it a complex and elegant perfume, fruity and with a sweet spicy taste. On the palate it is soft, with a persistent aftertaste.
Its charm lies precisely in the calibrated fusion of its components.
A perfect product for meats that have important cooking and for cheeses.

STOPPING:
Soft pressing was carried out on whole grapes. The must is fermented in steel. Prolonged resting on yeasts.
BOTTLING AND REFINING:
In the late spring following the harvest in order to allow proper refermentation. The product remains "sur lie" over 24 months before "degorgement."

Strictly manual, à la volée.

ORGANOLEPTIC CHARACTERISTICS:
Peach blossom pink, with slightly amber highlights. Fine and persistent perlage adds to the elegance of the product. Fruity notes of apricot, geranium and orange blossom, but also notes of bread crust and yeast. The aromas make it a very complex and harmonious Rosé des Noirs. On the palate, the bubbles are fine and elegant, caressing the taste buds, leaving their freshness and a round, aromatic hint.
FOOD PAIRINGS:
Excellent as an aperitif, the "Belle Bolle" is a very versatile wine, which also goes well with cold cuts, appetizers, any type of fish, white meat, mixed boiled meats and fried foods (fish, vegetables or meat).
