Description
Our Belle Bolle, created entirely in our winery in Tuscany, is the result of the oldest processing method for the production of classic method sparkling wine.
The second alcoholic fermentation takes place naturally on the yeasts and the product continues to undergo this process for a long time before the "degorgement".
The result is a brut classic method sparkling wine that has nothing to envy to the great wines created with the champenoise method, of high quality, with a fine and persistent perlage and a harmonious and balanced structure.

End of August, with strictly manual harvesting
STOPPING:
Soft pressing was carried out on whole grapes. The must is fermented in steel. Prolonged rest on the lees for at least 1 year.
BOTTLING AND REFINING:
In the late spring following the harvest in order to allow proper refermentation. The product remains "sur lie" for more than 1 year before "degorgement".
FLOODING:
Strictly manual, à la volée.

ORGANOLEPTIC CHARACTERISTICS:
Brilliant straw yellow with golden reflections, with a fine and persistent perlage that enriches the elegance of the product. Fruity notes of peach and apricot, as well as hints of freshly baked bread and yeast, give it a complexity and harmony to this Blancs-de Blancs. In the mouth the foam is subtle and smooth, caresses the taste buds leaving in the foreground its freshness and moderate persistence.
FOOD PAIRINGS:
Excellent as an aperitif, the "Belle Bolle" is a very versatile wine, which also goes well with cold cuts, appetizers, any type of fish, white meat, mixed boiled meats and fried foods (fish, vegetables or meat).
